Yesterday's meal was the lovely frittata that's pictured in the post below. Today's lovely creation is Spinach and Goat Cheese Omelet Muffins! The idea came from KERF.
I modified it to suit the ingredients I had on hand.
They could have used a bit more seasoning or goat cheese. I'm not sure which one but they were lacking a bit of flavour.
